At the foot of “Mandelberg” our most important red wine, the Spätburgunder, is cultivated. Lime-clay and sandy loess are decisive for the aroma of blueberry and strawberry.
The grape clusters of our Dornfelder vines are thinned-out to give proper balance to the vine and thereby giving a reminder of dark cherry and dark chocolate flavours.
In 2003, Christian on a visit to the Southern Tirol region, brought back 1500 vines of the Lagrein sort. Already the first vintage shows us just what potential Lagrein will have here on our estate.
From our Merlot vines -our second “introduced” wine- we can fill just a little more than a few baroque barrels (casks), as it is absolutely vital that small quantities are yielded from our warmest blocks, so as to bring the berries to the fullest of ripeness.
Our reserve wines are stored for 18 months in wood barrels. Here the right balance between new and used barrels is very important, as the real fruit of the grape should stand to the fore.
This traditional method involves a lot more work, but it is only such red wine which people swear to for health-giving properties and it is precisely these properties which we don´t want to cut-back on.
Our Rosé Wines are created using two distinct methods, firstly using the “Méthode saignée”. Here the red wine mash -a part of the rosé coloured most - is drawn off (bled) before a deeper colour is transferred from the grape skin. Or we use a method where part of the red wine crop blocks are harvested early and deliberately processed in a light and less coloured-intensive white-press method.
